Two dozen fresh Florida oysters, shucked and on the half shell
1 stick unsalted butter
Hot sauce (your favorite), to taste
2 tablespoons fresh parsley, chopped fine
3 lemons (1 for juice, 2 cut for garnish)
1 loaf crusty French bread
¼ cup Parmesan cheese, grated
Sea salt and fresh ground pepper, to taste
Pre-heat charcoal or gas grill. In a small sauce pot combine butter, hot sauce and lemon juice, season with salt and fresh ground pepper; place on the grill to melt, stir to combine. Taste and adjust with more lemon or hot sauce if needed.
Carefully place the oysters (in the half shell) directly on the grill. Cook for several minutes until the oysters start to bubble. Carefully spoon the butter over the oysters (butter can cause the fire to flare up). Sprinkle oysters with Parmesan cheese and parsley and serve with fresh lemon and French bread.
