Florida Blueberry Cobbler

Ingredients

Filling

4 cups fresh Florida blueberries, rinsed and drained

1 cup Florida sugar

1 stick unsalted butter

1 teaspoon lemon juice

Topping

1 cup self-rising flour

1 cup Florida sugar

1 teaspoon vanilla extract

1/2 cup milk

Preparation

Preheat oven to 375 degrees. Melt butter and pour into an 8-inch square baking dish. In a large mixing bowl, combine lemon juice and blueberries. Add sugar and mix well. Add the blueberry mixture to the baking dish. Do not stir.

Combine flour, sugar, vanilla, and milk in a small bowl. Pour over the blueberry mixture and bake 45 minutes or until brown.
