2 ounces Florida bourbon
1 Florida peach
2 sprigs fresh mint
½ ounce simple syrup
Ginger beer, chilled
Cut Florida peach in half and remove pit. Remove mint leaves from one of the sprigs and add to shaker with simple syrup and half of the peach. Using a muddling stick, mash peach mixture to release all the flavors. Add bourbon and fill the shaker halfway with ice. Place top on shaker and vigorously shake for at least 30 seconds. Fill a mason jar with fresh ice. Use a mesh strainer to pour over the shaken ingredients. Top with chilled ginger beer. Garnish with extra Florida peach and a mint sprig. Drink responsibly.
