1 large head of broccoli, trimmed and cut into florets
4 Florida eggs
1 cup panko
1/2 cup parmesan cheese, shredded
1 tablespoon garlic, finely chopped
1 tablespoon all-purpose seasoning (your favorite)
1 tablespoon fresh herbs, finely chopped
Salt, to taste
Preheat oven to 375 degrees and line a sheet pan with parchment paper. Fill 3/4 of a medium pot with water, add salt and bring to a boil. Add broccoli and cook for 3 minutes. Remove from boiling water and place in an ice bath to stop the cooking process. Once cool, drain and lightly squeeze the broccoli to get rid of excess water. Finely chop broccoli and add to a bowl with eggs, panko, cheese and fresh herbs. Stir to combine well. Using your hands, form tater tot shapes and place on lined sheet pan. Bake in the oven for 7 to 10 minutes or until golden brown. Serve warm with ketchup.
