Florida celery stalks, cut into 3 inch pieces
1 (4-ounce jar) pimento
8 ounces cheddar cheese, shredded
4 ounces pepperjack cheese, shredded
4 ounces Parmesan cheese, grated
4 ounces cream cheese, softened
1 cup mayonnaise
½ cup sour cream
1 teaspoon smoked paprika
½ teaspoon garlic powder
¼ teaspoon red pepper
Several dashes hot pepper sauce (optional)
Sea salt and fresh ground pepper, to taste
Wash and dry the celery and cut into desired lengths. Shred all the cheese into a large bowl. Add the remaining ingredients and mix to combine. Using a small serving spoon, spread the pimento cheese onto each piece of celery. Store in refrigerator for up to 1 week, until ready to serve.
