1 pound Florida jumbo lump blue crab, shells picked out
⅓ cup Florida sweet pepper, diced small
1 Florida lemon, juiced (plus more for garnish, wedged)
1 tablespoon Florida hot sauce
1½ tablespoons Florida spicy seafood seasoning blend
8 ounces cream cheese, softened
8 ounces cheddar jack cheese, shredded
½ cup mayonnaise
1 tablespoon stone-ground or spicy mustard
1 tablespoon fresh herbs (oregano, thyme, parsley), chopped fine
Preheat oven to 350 degrees. In a medium-sized mixing bowl, add the cream cheese, mayonnaise, mustard, lemon juice, chopped herbs, Florida seafood seasoning blend, fine diced peppers, hot sauce and half of the shredded cheese. Stir until ingredients are combined well. Gently fold in the Florida jumbo lump blue crab. Transfer the mixture to a small cast-iron pan or baking dish. Top with the remaining shredded cheese and bake for 20 to 25 minutes, until bubbly and brown. Remove from oven and let cool slightly. Garnish with lemon wedges, crackers or crostini bread. Serve hot with sliced Florida vegetables (cucumber, bell peppers, radish, celery, pickled okra) on the side.
