¼ cup Florida mango, diced very small or chopped fine
¼ cup quality vinegar (Champagne or similar)
1 lemon, juiced
1 teaspoon sugar
½ teaspoon sea salt
Fresh ground black pepper, to taste
1 tablespoon fresh spicy chili pepper (jalapeño or similar), sliced thin or diced small
2 tablespoons red onion, diced small
2 tablespoons fresh scallion or chives, chopped fine
In a small bowl, combine all ingredients. Mix ingredients and store in refrigerator until ready to use. Serve chilled alongside freshly shucked Florida oysters.
