1/4 cup Florida mango, diced very small, or chopped fine
1/4 cup quality vinegar (Champagne or similar)
1 lemon, juiced
1 teaspoon sugar
1/2 teaspoon sea salt
Fresh ground black pepper, to taste
1 tablespoon fresh spicy chili pepper (jalapeno or similar), sliced paper thin or diced small
2 tablespoons red onion, diced small
2 tablespoons fresh scallion or chives, chopped fine
In a small bowl, combine all ingredients. Mix ingredients and store in refrigerator until ready to use. Serve as a sauce on the side of freshly shucked Florida oysters.
