6-8 Florida peaches, sliced
1/3 cup Florida sugar
1/3 cup brown sugar
1 teaspoon pure vanilla extract
1/2 lemon, zested and juiced
1 teaspoon cinnamon
Dash of nutmeg
Topping
1 cup all-purpose flour
2 tablespoons Florida sugar
2 tablespoons brown sugar
1 1/2 teaspoons baking powder
6 tablespoons butter, chilled and cubed
6-8 tablespoons milk (must be cold)
Preheat oven to 400 degrees. Assemble topping first so the dough has a few minutes to relax. Combine the flour, sugar, brown sugar and baking powder in a mixing bowl. Using your fingers or a pastry cutter, cut in the butter until the flour resembles large crumbs. Add the milk a few tablespoons at the time until the dough comes together. The dough will be slightly sticky; set dough aside while the filling is made.
Slice the peaches and place in a mixing bowl (the peach skin can be left on or removed). Add the sugar, brown sugar, vanilla, lemon zest and juice, cinnamon and nutmeg; stir to combine. Spray the cast iron skillet (or 8-inch square baking pan) with nonstick cooking spray. Pour the filling in the skillet and top with spoonsful of dough. Bake for 20 to 25 minutes until the topping is cooked through and golden brown.
