2 medium Florida tomatoes or 10 ounces bite sized tomatoes, sliced
3 Florida peaches, sliced
1/2 cup fresh basil leaves, torn into bite sized pieces
1 pound fresh mozzarella cheese, sliced
2 tablespoons balsamic or white balsamic vinegar
2 tablespoons olive oil, plus more if desired
Sea salt and fresh ground pepper, to taste
Arrange the peaches, tomatoes, mozzarella and basil in a fun pattern on a chilled platter. Lightly season with salt and pepper. Drizzle evenly with the olive oil and vinegar.
