Florida Peanut Butter Chocolate Bars (No–Bake)

Ingredients

2½ cups Florida peanuts, shelled
Coarse sea salt, to taste
1 cup unsalted butter, melted
1 teaspoon natural vanilla extract
2 cups cookie crumbs, crushed fine (graham, butter, shortbread, chocolate or your favorite variety)
3½ cups powdered sugar
2½ cups semi-sweet chocolate chips
Flaky sea salt, for garnish

Preparation

To make peanut butter, add 2½ cups of shelled Florida peanuts to a food processor and blend until desired texture is reached, scraping down the sides as needed. Season to taste with coarse sea salt.

In a stand mixer, combine 2 cups Florida peanut butter, powdered sugar, vanilla, melted butter and crushed cookie crumbs. Mix on low until combined, then season to taste with sea salt. Line a 9×13 pan with parchment paper and spread the mixture evenly. Cover and refrigerate. Fill a medium pot halfway with water and bring to a simmer over medium-high heat. In a heatproof bowl, add semi-sweet chocolate chips and ½ cup peanut butter. Place the bowl over the pot (without touching the water) to create a double boiler. Stir until smooth and melted, then remove from heat. Carefully pour the melted chocolate over the chilled peanut butter mixture. Spread with a spatula and sprinkle lightly with flaky sea salt, if desired. Cover and refrigerate until fully set. Lift out using the parchment and slice into portions, cleaning the knife between cuts. Serve chilled.
