1 ½ pounds large Florida pink shrimp (heads off, peeled and deveined if desired)
5 ears Florida sweet corn, husked and cut in half
1 large Florida tomato, diced small
1 pound small new potatoes (peeled if desired)
1 teaspoon vegetable oil
1 pound cooked smoked sausage, cut into
½ cup (plus more for garnish) seafood boil seasoning mix (adjust amt if desired)
2 lemons, halved
¼ cup fresh parsley, chopped fine
Sea salt and fresh ground pepper, to taste
Fill a large pot with water and bring to a boil. Add seafood seasoning, lemons, sausages, and potatoes. Cook for 10-15 minutes and then add the corn. Bring back to a boil and add the shrimp. Cook for additional 6-8 minutes or until shrimp is cooked through. Remove from heat and drain cooking liquid. Shrimp boil can be served family style on layers of butcher paper or on a platter. Lightly sprinkle with additional seafood boil seasoning. Garnish with diced tomato, bell peppers, and parsley. Serve with additional lemon wedges, melted butter and/or hot sauce if desired.
Fresh tip: can add additional ingredients such as clams or blue crabs
