6-8 Florida radishes, sliced thin
2 Florida cucumbers, sliced thin
1 teaspoon Florida wildflower honey
2 Key limes, zested and juiced
½ red onion, sliced thin
¼ cup olive oil
3 tablespoons red wine vinegar
2 tablespoons dill, finely chopped
2 tablespoons parsley, finely chopped
1 garlic clove, minced
Sea salt and fresh ground pepper, to taste
Prepare dressing by whisking together oil, lime juice and zest, honey, vinegar, dill, garlic, salt and pepper. Pour over sliced radishes, onions, and cucumbers. Allow to marinate in refrigerator for at least 2 hours before serving. Garnish with parsley and serve chilled.
