1 pound precooked, chunked Florida spiny lobster meat
8 leaves Florida hydroponic butter lettuce
½ cup unsalted butter
½ Florida lemon, juiced (plus additional lemon sliced for garnish)
1 tablespoon garlic, chopped fine
2 to 6 dashes Florida datil pepper hot sauce
1 tablespoon Florida spicy seafood seasoning blend
1 tablespoon fresh herbs (parsley, thyme), chopped fine
1 tablespoon fresh chives (or scallions), chopped fine
4 to 6 top-sliced brioche or hot dog buns, toasted or griddled
Sea salt and fresh ground pepper, to taste
Preheat a large sauté pan over medium-low heat. Add two tablespoons of butter to the preheated sauté pan. Add the precooked chunked lobster meat and garlic to the melted butter. Add the Florida seafood seasoning blend, chopped herbs, hot sauce and lemon juice. Stir ingredients until warm and fully coated. Adjust seasoning with sea salt and fresh ground pepper, to taste.
In a separate small saucepan over low heat, melt the remaining butter. Brush the buns with the melted butter and toast in a pan or toaster oven until warm and soft.
To serve, line each bun with lettuce leaves. Spoon equal amounts of the Florida lobster mixture into the buns. Garnish the tops of each lobster roll with chives or scallions. Serve warm with extra sliced lemon on the side.
