8 Florida strawberries
3 large sprigs fresh mint
4 ounces Florida rum
2 ounces simple syrup
1 lime, plus more for garnish

Remove tops from 6 of the Florida strawberries and lightly chop. Add chopped strawberries to the bottom of a cocktail shaker. Remove mint leaves from one of the sprigs and add to shaker with simple syrup. Quarter 1 of the limes and add to the shaker. Using a muddling stick, mash strawberry mixture to release all the flavors. Add rum and fill shaker halfway with ice. Place top on shaker and vigorously shake for at least 30 seconds. Fill two tall collins glasses to the top with ice. Use cocktail ice strainer to strain the rum mojito mixture into the tall glasses filled with ice. Garnish each glass with a fresh strawberry, mint sprigs and a slice of lime. Top each glass with chilled club soda to the top. Drink responsibly.
