10 ounces goat cheese
¼ cup freeze-dried Florida strawberries, crushed
¼ cup Florida pecans, toasted and chopped
¼ cup fresh Florida herbs (dill, thyme, parsley), chopped fine
1 bunch fresh rosemary, trimmed into 2-inch stems
Roll the goat cheese into 16 equal-sized balls. Place on a plate lined with parchment paper. Cover with plastic wrap and place in the refrigerator for about 30 minutes. Roll or dip the chilled goat cheese balls in the crushed strawberries, pecans and/or chopped herbs until coated as preferred. Garnish each ball with a rosemary sprig. Serve chilled with Florida honey and crackers.
