Florida Watermelon Poke Bowl

Ingredients

3 cups Florida watermelon, diced medium

1 Florida bell pepper, diced medium

1 Florida avocado, diced medium

1 Florida cucumber, diced medium

1 (5-ounce) package Florida arugula

2 tablespoons Florida Key lime juice

1 serrano pepper (or favorite hot pepper), sliced thin (optional)

1 tablespoon fresh ginger, minced

2 tablespoons tamari or soy sauce

1 teaspoon sesame oil

1 teaspoon sesame seeds

1/3 cup vegetable oil

Sea salt and fresh ground pepper, to taste

Preparation

Combine first 5 ingredients, mix well and set aside. In a small bowl, combine the ginger, lime juice, tamari, sesame oil and vegetable oil. Whisk until completely mixed. Pour enough dressing over salad mixture to coat; toss to combine. Sprinkle sesame seeds and serve chilled family style or individual servings.
