2 (6-ounce) Florida swordfish steaks
⅛ cup freshly squeezed Florida Key lime juice, plus extra quartered Key limes for garnish
1 tablespoon olive oil
2 tablespoons all-purpose seasoning, divided
2 tablespoons fresh herbs (such as parsley or thyme) chopped fine (plus more for garnish), divided
Sea salt and fresh ground pepper, to taste
1 ½ cups mayonnaise
1 teaspoon stone ground or Dijon mustard
Prepare grill (gas or charcoal). Evenly drizzle 1 tablespoon olive oil on both swordfish steaks and season with salt, pepper, 1 tablespoon fresh herbs and 1 tablespoon all-purpose seasoning. Place fish on grill (or in grill pan) over direct heat and cook for 3 to 4 minutes depending on thickness. Flip and cook for additional 3 minutes or until cooked through. Remove from heat and set aside.
In a small mixing bowl, combine mayonnaise, 1 tablespoon fresh herbs, 1 tablespoon all-purpose seasoning, Key lime juice and mustard. Thoroughly mix all ingredients to combine. Taste and adjust seasoning with salt and pepper. Serve the grilled Florida swordfish steaks with the Key lime sauce. Garnish with quartered Key limes and extra fresh herbs.
