2 Florida pork tenderloins, trimmed
2 Florida mangoes (not fully ripe), peeled and sliced thin
2 Florida cucumbers, sliced thin
1 ½ tablespoons dry island or Jerk spice blend
1 tablespoon olive oil plus more for cooking
1 cup mango chutney
1 ½ teaspoon fresh garlic, minced
1 ½ teaspoon (plus more to taste) crunchy chili garlic
1 tablespoon fresh jalapeno, sliced thin
1 bunch scallions, sliced
1 cup sweet peppers, sliced
2 limes, juiced
¼ cup fresh cilantro, chopped
Sea salt and fresh ground pepper, to taste
Preheat grill to medium-high heat. Use a medium-sized mixing bowl to combine the sliced mango, sliced cucumber, sliced sweet peppers, sliced scallions, sliced jalapeno, lime juice, chopped cilantro, 1 teaspoon minced garlic, 1 tablespoon olive oil, 1 teaspoon chili garlic and ½ teaspoon island seasoning. Stir to coat. Taste and adjust seasoning with salt and pepper. Cover mango chow chow with plastic wrap and place in refrigerator until needed.
In a small cast iron pan, add the mango chutney, ½ teaspoon minced garlic and ½ teaspoon chili garlic. Stir and place cast iron pan on back of grill in a spot that is not as hot. Let cook while stirring occasionally.
Evenly season trimmed pork tenderloins with 1 tablespoon of island seasoning blend and add to grill. Use a little olive oil to help prevent sticking if necessary. Cook pork tenderloins while turning them for even cooking. Pork should be cooked until an internal read thermometer reads 160 degrees. When desired temperature is reached, remove pork tenderloin from grill and let rest for 5 to 8 minutes before slicing.
To serve, slice the pork tenderloin and arrange on a serving platter. Place mango chow chow on a platter with the sliced pork tenderloin. Lightly spoon some of the mango chutney on sliced pork while serving extra on the side.
