2 large Florida baking potatoes
2 cups cooked BBQ shredded pork
½ cup honey BBQ sauce
2 tablespoons fresh chives, finely chopped
1 cup cheddar cheese, shredded
½ cup sour cream
½ cup cooked bacon, chopped
1 tablespoon BBQ spice blend
Olive oil for cooking
Use a medium pot of salted boiling water to cook potatoes whole until almost tender (about 20 to 25 minutes). Remove Florida potatoes from boiling water and let cool. Preheat grill or cast iron grill pan over medium-high heat. Preheat the oven to 350 degrees.
Cut each par-cooked potato in half and lightly season with the BBQ seasoning. Lightly oil grill pan and the cut side of the potatoes. Carefully add potatoes cut side-down to the grill or grill pan. Cook potatoes for about 3 minutes on each side until crispy and completely cooked throughout. Remove potatoes from grill pan and carefully cut lengthwise for stuffing. Place the cut potatoes on a cooking sheet or individual baking pans. Evenly stuff each potato with the pulled pork BBQ and top with even amount of shredded cheese and cooked bacon. Place the stuffed and topped potatoes in the preheated oven and cook for 8 to 10 minutes until hot and bubbly. Remove cooked potatoes from oven and garnish with extra BBQ sauce, sour cream and chives. Serve warm.
