Pan-Seared Florida Soft-Shell Crab

Ingredients

4 large fresh Florida soft-shell crabs, cleaned

¼ cup cornstarch

1 ½ cups unbleached flour

1 cup milk

Oil for cooking

Sea salt and fresh ground pepper, to taste

Preparation

Preheat a large heavy-bottomed skillet or griddle over medium-high heat. In a medium mixing bowl, combine flour, cornstarch, sea salt and pepper. Pour the milk into a bowl large enough to fit the crab. Dry the soft-shell crabs with a paper towel then dredge in the seasoned flour mixture. Next, dip the coated crabs in the milk, then back into the flour mixture. Repeat with remaining crabs. Lightly coat the bottom of the preheated pan with cooking oil. Carefully place crabs top side down in pan for approximately 2 minutes, or until crispy and golden brown. Carefully flip and cook for an additional 2 minutes, or until completely cooked through. Remove from pan and let drain on a paper towel. Serve with your favorite dipping sauce.
