Florida Grilled Shrimp and Confetti Rice

Ingredients

1 pound Florida shrimp, peeled and deveined

1 Florida zucchini, finely chopped

1 Florida squash, finely chopped

1 ear Florida sweet corn, kernels removed

1 Florida carrot, finely chopped

1 stalk Florida celery, finely chopped

3 Florida Key limes, juiced

1/4 cup green onions, finely chopped

1 bunch parsley, finely chopped

1 garlic clove, minced

2 tablespoons butter, divided

2 tablespoons olive oil, divided

1 tablespoon all-purpose seasoning

3 cups cooked rice (brown or white)

Sea salt and fresh ground pepper, to taste

Preparation

Preheat saute pan to medium-high heat. Add 1 tablespoon butter and 1 tablespoon oil. Add vegetables (except green onions and parsley) to pan. Season with salt, pepper and all-purpose seasoning and saute for 3 to 5 minutes. Next add cooked rice and stir to combine. Cook for 3 more minutes then remove from heat and transfer to large bowl. Using same pan, add remaining oil, butter and garlic. Add shrimp and Key lime juice. Saute for 3 to 5 minutes or until done. Remove from heat and place shrimp on top of confetti rice. Sprinkle with green onions and parsley. Serve warm with extra Key lime wedges if desired.
