1 pound Florida beef (tenderloin, sirloin, or your favorite cut of beef), cut into 2-inch strips
2 cups Florida broccoli, cut into small florets
1 Florida zucchini, sliced thin into half-moons
1 cup prepared Florida bamboo, cut into matchsticks
1 large Florida bell pepper, sliced
1 bunch scallions, rinsed and sliced
½ cup onion, slivered
1 tablespoon fresh garlic, minced
1 tablespoon fresh ginger, peeled and minced
2 teaspoons vegetable oil
¼cup sweet chili sauce
2 tablespoons soy sauce
¼ cup fresh cilantro, chopped
¼ cup corn starch
Sea salt and fresh ground pepper, to taste
Preheat a wok or large sauté pan over medium-high heat. Season the cut beef with salt and pepper. Lightly dust the beef strips with the corn starch. Add 1 teaspoon of the vegetable oil to the preheated pan. Lightly shake the beef to remove any excess corn starch. Carefully and without crowding, add the
beef to the oiled pan. Cook the beef for about 3 minutes, or until browned and slightly crispy. Remove the cooked beef from the pan onto a clean plate with a paper towel to drain.
Keep the sauté pan or wok on the heat and add the other tablespoon of vegetable oil. Carefully add the onions and broccoli. Cook the onions and broccoli while stirring for about 4 minutes. Add the bamboo, sweet peppers, garlic, ginger, and scallions. Continue to cook while stirring for another 2 to 3 minutes, or until the vegetables are crisp-tender. Add the cooked beef, soy sauce, sweet chili sauce, and cilantro. Remove from the heat and toss ingredients to coat. Add sea salt and fresh ground pepper, to taste. Serve warm with rice or noodles.
