1 pound fresh Florida blueberries
2 tablespoons Florida sugar
2 tablespoons Florida honey
1 1/4 cups blueberry preserves
1 pound Italian mascarpone cheese, room temperature
1 cup heavy whipping cream, chilled
1 teaspoon vanilla extract
1 (7-ounce) package ladyfinger cookies
In a large bowl, combine softened mascarpone, sugar and honey and mix thoroughly. In a separate bowl, whisk heavy cream and vanilla until stiff peaks form. Gently fold heavy cream mixture into the mascarpone mixture. Use individual bowls or small dessert dishes to serve. Place blueberries in the bottom of the dish, followed by a dollop of preserves. Next, add crumbled ladyfingers, then a dollop of the mascarpone mixture. Continue layering. Store in refrigerator until ready to serve.
