2 pounds Florida alligator ribs, separated into individual riblets
3 cups all-purpose flour
1/2 cup cornstarch
2 tablespoons seafood seasoning, plus more for sprinkling
1 1/2 cups BBQ sauce (your favorite)
Sea salt and fresh ground pepper, to taste
Preheat fryer to 350 degrees. Place flour and cornstarch into a large bowl and mix. Dry the alligator ribs with paper towel to remove any excess moisture. Liberally season the alligator ribs with the seafood seasoning. Working in batches, place a third of the seasoned alligator ribs (depending on the size of your fryer) into the flour mixture. Coat evenly and lightly shake to remove any excess flour. Place into fryer basket but do not overcrowd. Fry for 2 to 3 minutes until ribs are completely cooked. Do not overcook. Transfer to a plate lined with paper towel to drain. Repeat until all ribs are cooked. Drizzle with barbecue sauce and sprinkle with seafood seasoning. Serve immediately.
