2 Florida mangoes
2 tablespoons Florida Key lime juice
1 tablespoon Florida Orange Blossom honey
1/3 cup onion, diced fine
3 tablespoons white vinegar
¼ cup sweet chili sauce
¼ teaspoon red pepper flakes (or more, to taste)
½ teaspoon fresh grated ginger
½ teaspoon curry powder
1 teaspoon oil, for cooking
Sea salt and black pepper, to taste
Preheat a saucepot over medium heat. Add oil and sauté onions until soft and translucent (about 5 minutes). Add the remaining ingredients and stir to combine. Bring to a boil for one minute then reduce to simmer for 15 minutes, stirring often. Remove from heat and allow to cool, store in refrigerator. Served chilled or room temperature.
