4 Florida peaches, pits removed and diced large
½ stick unsalted butter
1 cup brown sugar
¼ cup spiced rum
4 large scoops vanilla ice cream
Dash of salt
Preheat a medium sauté pan over medium-low heat. Add the butter, brown sugar and dash of salt to the preheated pan. Stir the mixture until the sugar has dissolved. Carefully add the large diced peaches to the sauce and cook for about 2 minutes or until they start to soften slightly. Remove the pan away from the heat source and carefully add the rum. Place the pan back over the heat and being extremely careful use a stick lighter to ignite the peach mixture. *If the sauce is extremely hot, the alcohol can ignite on its own. Use extreme caution.* When the flame burns out it’s ready to serve (it may take up to 1 to 2 minutes.) Serve over vanilla ice cream.
Fresh tip: This dish can be prepared without the addition of alcohol. Feel free to add a dash of milk or heavy cream at the end of the cooking process to add a creamy element!
