Florida Shrimp and Creamed Corn

Ingredients

1 pound Florida shrimp, peeled and deveined

4 ears Florida sweet corn, cut off the cob

1/2 cup Florida bell pepper, diced small

1/4 cup Florida celery, diced small

1/4 cup green onions, chopped fine

1/2 cup bacon, cooked crisp and roughly chopped

1/2 cup heavy cream

1 tablespoon garlic, minced

1 tablespoon all-purpose seasoning (your favorite)

2 tablespoons unsalted butter

1 tablespoon vegetable oil

1 tablespoon fresh herbs (your favorite)

Squeeze of fresh lemon juice

Sea salt and fresh ground pepper, to taste

Preparation

Preheat large skillet over medium-high heat. Add oil and butter. Saute garlic, bell peppers, and celery for 2 minutes. Season shrimp with salt and pepper and add to skillet and saute for another minute. Next add the corn and all-purpose seasoning; mix and saute for 2 minutes. Stir in bacon bits and mix for another 2 minutes. Pour in the heavy cream. Bring to a boil then reduce to a simmer until slightly thickened, about 5 minutes. Taste and adjust seasoning if needed. Add in green onions, fresh herbs and lemon juice and serve warm over rice.
