1 pound Florida alligator nuggets, defrosted or fresh, pounded slightly to tenderize
4 cups cornmeal
2 cups buttermilk
For Sauce:
6 tablespoons Florida honey
3 tablespoons Dijon mustard
2 tablespoons mayonnaise
1 tablespoon freshly chopped parsley
Cayenne pepper to taste
Sea salt and freshly ground pepper to taste
Combine sauce ingredients; adjust seasoning if needed and set aside.
Preheat fryer to 350 degrees. Place cornmeal and buttermilk in separate bowls and season with salt and pepper. Dip each alligator nugget into the cornmeal and then into the buttermilk. Let the buttermilk drain slightly, then dip nugget back into cornmeal. Shake off excess cornmeal. Place nuggets into a fryer basket but do not overcrowd. Repeat the process until all the alligator nuggets are coated. Fry for 2 to 3 minutes until nuggets are completely cooked. Do not overcook alligator meat as it can become chewy. Transfer nuggets to a plate lined with a paper towels to drain. Serve warm with dipping sauce.
