4 ears fresh Florida sweet corn
2 Florida tomatoes, diced
1 cup Parmesan cheese, grated
2 tablespoons fresh basil, torn
Preheat grill to high. Shuck corn and place directly on a hot grill or over hot coals. Rotate and cook until charred, about 10 minutes. Remove from heat and let cool for 5 minutes. Add diced tomatoes, Parmesan and basil just before serving.
