1 pound Florida flank steak
3 large Florida bell peppers, sliced
1 Florida jalapeno, sliced (for heat, if desired)
1½ large onions, sliced
1 tablespoon fresh garlic, minced
2 tablespoons taco seasoning spice blend
2 teaspoons vegetable oil for cooking
⅓ cup fresh cilantro
2 limes, quartered
6 to 12 soft corn or flour tortillas
Sea salt and fresh ground pepper, to taste
Preheat a large cast-iron or sauté pan over medium-high heat. Season the flank evenly with 1 tablespoon of taco seasoning blend. Add 1 teaspoon vegetable oil to the preheated pan. Carefully add the seasoned steak to the pan. Cook the steak for 2 to 3 minutes on each side or until desired doneness. Remove the steak from the pan and let rest.
In the same pan over medium-high heat, add the other teaspoon of vegetable oil. Carefully add the onions, peppers, jalapeno, and remaining tablespoon of taco seasoning. Cook peppers and onions for about 6 minutes or until slightly charred and tender. Add the garlic and cilantro, toss to combine. Remove the pan of peppers from the heat.
To serve, slice the flank steak against the grain and arrange it on top of the pepper and onion mixture. Season the sliced steak lightly with salt and pepper, to taste. Garnish with lime quarters and serve with sour cream and fresh salsa.
