3 pounds Florida green peanuts
2 tablespoons natural Florida sugar
4 tablespoons all-purpose seasoning (Everglades)
1 cup sea salt
1 teaspoon liquid smoke
1 tablespoon fresh garlic, minced
2 tablespoons fresh herbs (thyme, rosemary, parsley), chopped fine
1 teaspoon olive oil
Water to cover
Rinse peanuts to remove any debris. Add peanuts to pressure cooker with enough water to cover. Add salt, liquid smoke and 3 tablespoons of seasoning blend. Place lid on, and turn pressure lever to high. Cook for 75 minutes or until tender. Carefully release steam by turning pressure lever to vent (steam can cause severe burns, do not place hand over or near steam). Drain and place the boiled peanuts into a mixing bowl. Add remaining tablespoon of seasoning blend, chopped herbs, garlic and olive oil. Toss ingredients to coat. Serve warm.
