1 pound small Florida gold potatoes
1 small wheel of Brie
4 sprigs fresh thyme, leaves stripped and chopped
1 tablespoon smoked paprika
Oil for cooking
Sea salt and fresh ground pepper, to taste
Preheat oven to 375 degrees.
Fill large pot with water and bring to a boil, add 1 tablespoon salt, and boil potatoes until fork-tender, about 10 to 12 minutes. Remove and drain water.
Preheat a large oven-safe pan over medium-high to high heat. Add enough oil to coat bottom of pan and add in cooked potatoes and fresh thyme. Sear until golden brown and season with smoked paprika, salt and pepper. Push some potatoes aside and place the Brie into the pan. Place in oven for about 5 minutes or until the cheese is soft but not runny. Remove from oven and slice open to allow Brie to melt into potatoes. Taste potatoes and adjust with salt and pepper if needed.
