4 Florida Beef and Vegetable Meatballs
4 cups Florida salad greens
1 cup Florida sweet peppers, seeds removed and sliced
1 cup Florida cucumber, sliced
1/4 cup Parmesan cheese, grated
1/3 cup Italian vinaigrette (your favorite)
Warm Florida Vegetable and Beef Meatballs in a 300-degree oven until warm throughout. In four bowls, arrange the greens, sweet peppers and cucumbers in a layered fashion. Top each salad with a meatball and a generous sprinkling of Parmesan cheese. Serve salad with your favorite vinaigrette.
Fresh Tip: A simple squeeze of lemon and a few dashes of olive oil make a great low-fat salad dressing.
